Two bartenders greeted me for happy hour. My partner and I decided to share a drink, a Blood and Sand (a Scotch drink) and a Green Fairy (An Absinthe Cocktail). The Green Fairy was not on the menu, but my agile bartender, Freddy, pulled out a reciepie and went to work squeezing an orange and separating egg whites. The drink was built in a shaker and seemed very difficult to make. A pinch of this, a dash of that, then two rounds with the shaker and the end result was the drink you see above. That froth on the top was why they use egg white. The drink was amazing with a hint of the signature star anise flavor.
I chatted with Freddy and the other bartenders and really felt that these guys are dead serious about the art of mixology. I dabble at home, but these folks make their bitters and other ingredients from scratch making their drinks on par with any bar anywhere.
The happy hour drinks were just $6 too. I think I'll be back soon.
